The simplicity of the recipe will amaze you; all you need is 4 ingredients to make a coffee-flavor-packed, deliciously creamy, and smooth dessert. The texture of the semifreddo is just divine; it literally melts in your mouth with the great richness of coffee.
Ingredients
4 tablespoons soluble coffee (1/4 cup)
20 ml milk (1/12 cup)
3 tablespoons condensed milk (1/8 cup)
400 ml whipping cream (1 + 2/3 cups)
Ingredient Notes
- Coffee: Good quality coffee will make a great difference in the taste. We use a high-quality coffee powder with the perfect balance of bitterness and floral notes.
- Milk: Milk helps in dissolving the coffee. I prefer using whole dairy milk but feel free to experiment with different varieties.
- Sweetened Condensed Milk: Condensed milk adds sweetness to the semifreddo. We also recommend it because it does not give the semifreddo an icy texture upon freezing.
- Whipping Cream: The Whipping cream is the main base of semifreddo. It gives the semifreddo a creamy, airy, and light texture that melts on the tongue.

Expert Tips
- Ensure the dessert is frozen for at least 3 hours to set.
- Make sure that the coffee is completely dissolved in the milk. Otherwise, the coffee’s taste will not be dispersed.
- For the whipping, use cooled whipping cream. In a short time, cool whipping cream will form peaks that are much lighter and fluffier than whipping cream at room temperature.
- Use caution when whipping cream using an electric hand mixer or stand mixer. These mixers have the potential to over whip the cream, causing the mixture to split or spoil. Once peaks start to form, lower the speed of the mixer.
- Make sure to gently fold in the cream with the spatula; overmixing may remove air from the mixture.
Variations
- Chocolate: You can add chocolate bits or chips in the semifreddo to add a chocolate surprise. Feel free to use dark chocolate or even white chocolate depending on your liking.
- Praline: You can add praline in the semifreddo to add a different texture and crunch.
- Nuts: Add chopped nuts like pecans, hazelnuts, walnuts, peanuts, or almonds. The nuts will add crunch and texture to your dessert.
- Jams and Spread swirls: For a fruity surprise, add swirls of your favorite jam, like raspberry or strawberry jam, in the filling. You can also swirl in spreads or nut butter, such as Nutella, Peanut Butter, or Biscoff Spread.
Storage
You can store the dessert in an airtight container and refrigerate for 2 to 3 days. Make sure to cover it with plastic wrap; otherwise, it will become icy. Serve chilled for the best taste experience.
