Quick and Easy 4 ingredient Cookie Sandwiches give you a recipe that doesn’t involve baking, or Cooking and perfectly delightful dessert for everyone!

We all love creamy desserts, but the only thing that stops us from making them is the time-consuming process of cooking or baking them. But these creamy cookie sandwiches are easy to make, just like counting 1, 2, 3… The preparation literally takes a minute or two, and you can have something like a cheesecake filling sandwiched between your favorite chocolate cookies.

Ingredients

  • 250 g sweetened whipping cream ( vegetable ) (1 cup)

  • 200 g mascarpone cheese (3/4 cup)

  • 100 g white chocolate

  • chocolate biscuits

  • Place in freezer for 6 hours

Ingredient Notes

  • Sweetened Whipping Cream: The sweetened Whipping cream is the main base of the filling. It is the perfect element that gives the filling sweetness and fluffiness.
  • Mascarpone Cheese: Mascarpone cheese adds a cheesecake taste to our dessert. It is light and much more decadent than the usual cream cheese; therefore, it is perfect for such desserts.
  • White Chocolate: The white chocolate adds a hint of sweetness and enhances the overall richness of the filling.
  • Chocolate Cookies: With all the creamy filling, chocolate cookies add a perfect element of crunch to the dessert. Their chocolate-rich flavour also balances out the sweetness of the filling

Preparation

Filling Base Preparation:

  • In a clean mixing bowl, pour in sweetened whipping cream.

  • Now add mascarpone cheese to the whipping cream.

  • Whisk them until soft peaks are formed.

  • Pour in melted white chocolate and whisk until combined

  • Fold in the mixture over the sides to incorporate it into the mixture.

  • Pour the filling into the piping bag with the nozzle.

Assembly:

  • Pipe the mixture onto the cookie and sandwich the other cookie over the filing.
  • With the help of a spoon, remove the extra cream from the cookie sandwiches.
  • Assemble the cookie sandwiches and freeze them for at least 6 hours.

Serving:

  • Serve them chill.

Expert Tips

  • Ensure the dessert is refrigerated for at least 6 hours for the filling to set.
  • Use chilled whipping cream for the filling. Cool whipping cream will form peaks quickly and be much lighter and fluffy than at room temperature.
  • Be careful if you use a stand or electric hand mixer to whip the cream,. Such mixers might over-whip the cream, which results in a split or spoiled mixture. As soon as peaks are formed, stop whipping.
  • Make sure the melted white chocolate is cooled or at room temperature. Otherwise, the hot melted chocolate might split the cream.
  • Microwaving the white chocolate to melt might burn it. We have used the double boiling method to melt the white chocolate. Then, cool it to room temperature before mixing to avoid splitting the cream.
  • Fold in the white chocolate gently with a spatula. Otherwise, vigorous mixing will cause the cream to lose its fluffy texture, resulting in an icy filling instead of a creamy one when frozen.

Variations

  • Chocolate: You can dip the cookie sandwiches in the chocolate to add more richness and a chocolatey taste.
  • Coffee: Mix in a shot of espresso or instant coffee in the filling to have a coffee-flavored kick within the dessert.
  • Desiccated Coconut: Use desiccated coconut to cover the sides of the creamy cookie sandwiches to add tropical flavor.
  • Nuts: You can either cover the edges of the sandwiches with chopped nuts like pecans, hazelnuts, walnuts, peanuts, or almonds, or you can add the nuts to the filling, too.
  • Jams and Spread swirls: For a fruity surprise, swirl in your favorite jam, like raspberry or strawberry ja, in the fillingrise. You can also swirl in spreads or nut butters like Nutella, Peanut Butter, or Biscoff Spread.

Storage

You can store these dessert sandwiches in the freezer for a week. Cover them with plastic wrap and serve them chilled for the best taste experience.
